Jumbo Olympic chocolate muffins 🇫🇷🫶 These are the most chocolaty gooey muffins you’ll ever have. Ingredients: Chocolate Muffins - ½ cup unsweetened cocoa powder - 2 tsp instant espresso or coffee - ¼ cup semisweet chocolate chunks or chips - ½ cup buttermilk - ¼ cup water - 3/4 cup granulated sugar - ¼ cup dark or light brown sugar, packed - ½ cup vegetable oil - 2 large eggs, room temperature - 1 egg yolk, room temperature - ½ cup sour cream, room temperature - 1 Tbsp vanilla extract - 2 cups all-purpose flour - 2 tsp baking powder - ¼ tsp baking soda - ½ tsp salt - Add-ins: 1⅓ cups semisweet or milk chocolate chunks Topping: 1/2 cup of chocolate chunks Chocolate Ganache topping: - about ½ cup heavy cream - about ⅔ cup semisweet or bittersweet chocolate chips Instructions: 1. Preheat oven to 350. Line a muffin pan with about 12 liners. 2. In a small saucepan over low heat, stir together the cocoa powder, instant espresso, ¼ cup chocolate chips, buttermilk, and water until melted. Don’t let the mixture boil. 3. Pour the melted mixture into a large bowl and let it cool for about 10-15 minutes. 4. Add the granulated sugar, brown sugar, oil, eggs, egg yolk, sour cream, and vanilla into the cooled chocolate mixture. Whisk for 1-2 minutes until frothy. 5. Sift in the all-purpose flour, baking powder, baking soda, and salt. Fold with a spatula until combined. 6. Stir in your chocolate chips and be careful not to over mix. 7. Now fill your muffin liners. Mine were huge so it took about 4 scoops using my tiny scooper. But overall they should all be about 3/4 to the top full. 8. Bake at 350F for about 20-25 minutes or until a toothpick comes out of them clean. 9. To make the chocolate ganache/sauce put it in a bowl and put it in the microwave for about 30 seconds 3 times. Make sure you stir in between. You can also make the sauce on the stove in a saucepan. 10.
